I've been rather depressed lately about what I can and cannot eat. I try to focus on what I CAN eat and ignore what I CAN'T, but it is difficult. Especially when you go out to a restaurant and you get a salad (because it is something you CAN eat) and your husband gets Eggs Benedict... seriously wanted to hurt him (but I didn't... aren't I a good girl?).
So I followed the directions on the box for GF Pancakes. They were not bad! This coming from a person who doesn't really like pancakes (I've just been craving them lately because I can't have them). When I have eaten pancakes in the past, they've either been silver-dollar pancakes or they had fruit on them rather than syrup. I don't care for the texture of large pancakes with syrup...
Hedging my bets, I made silver-dollar pancakes for dinner (with bacon and hashbrowns... had to include meat and potatoes for the man to eat it). I learned that I can only eat about 4 silver dollar pancakes when I'm eating hashbrowns along with them. But they were good! It's nice to have another option for a quick dinner when I don't really want anything else.
